Chapter 5: Food Quality and Food Safety
Introduction
Food is a major determinant of health, nutritional status and productivity of a population, so the food we eat must be wholesome and safe. This chapter of Unit II (Nutrition, Food Science and Technology) explains why food safety and quality have become a worldwide concern. The book gives a striking statistic: according to the National Family Health Survey 2015-16, more than 9 lakh Indian children under five suffered from acute diarrhoea. Food-borne illness can cause death. It can also damage trade, tourism and earnings.
Key Concepts
Significance: why concern has grown. The book lists several reasons:
Food safety means assurance that food is acceptable for human consumption according to its intended use. Two related terms explain it:
Hazards are of three kinds:
Microbial food-borne disease takes two forms:
Parasites such as tapeworm in pork also cause infestation. New pathogens emerge through host changes, mutation, climate, mass production and globalisation.
Other key terms
Food service providers must attend to five salient points: quality of raw materials and water, cleanliness, storage at appropriate temperature, food hygiene, and good service practices.
Food standards exist at four levels:
Standards in India
International bodies
An effective food control system needs two things: food inspection and analytical capability.
Food safety management systems
Activities & Case Examples
- sesame oil in ghee: 1 per cent sucrose and concentrated HCl give a pink colour
- stalks in tea: should be below 25 per cent
- light berries in black pepper: they float in an alcohol-water mixture
- metanil yellow in turmeric: concentrated HCl gives a pink to magenta colour
- starch in milk or ice cream: iodine gives a blue colour
- colophony resin in asafoetida: copper acetate gives a blue or green colour in the ether layer
Career Paths
The food industry accounts for about 26 per cent of GDP. Useful knowledge areas are food chemistry, food processing and preservation, food analysis and quality control, food microbiology, food laws and sensory evaluation. The career avenues listed are:
Fig. 6.6 adds HACCP auditor, HACCP trainer and R&D roles. For entrepreneurship, one could set up an analytical laboratory, a food safety consultancy, or food safety and sanitation education.
Board Exam Focus
The review questions ask you to:
Practise adulteration tests with the exact reagent and colour change for each.

💡 Key Learning Points
- ✓Food safety means assurance that food is acceptable for human consumption according to its intended use. Toxicity is a substance's capacity to harm; hazard is the probability of harm when it is not used in the prescribed manner and quantity.
- ✓Hazards are physical (hair, stones, nails), chemical (pesticide residues, adulterants, excess additives) or biological (visible pests, and invisible microbes such as bacteria, viruses, yeasts, moulds and protozoa).
- ✓Food intoxication is caused by toxins that survive even after the organism dies (Staphylococcus aureus). Food infection is caused by live pathogens multiplying in the body (Salmonella, which doubles every 20 minutes and spreads by cross-contamination).
- ✓Food standards work at company, national (FSSAI), regional and international (ISO, Codex) levels. The FSSA 2006 consolidated the PFA 1954 and older Orders and shifted food law from vertical (compositional) to horizontal (safety) standards.
- ✓GMP, GHP and HACCP are food safety management systems. HACCP is preventive and checks every step, so it is more efficient than end-product testing; it supports careers in quality control, auditing, inspection, research and consultancy.
👨🏫 Teaching Tips
- →Open with the NFHS 2015-16 figure (more than 9 lakh under-five children with acute diarrhoea) and ask students to name the last time they or their family had a stomach upset after eating out.
- →Sort a bag of pictures or real items (a hair, a stone, an empty pesticide bottle label, a photo of a weevil) into physical, chemical and biological hazards to fix the three categories.
- →Draw a kitchen timeline to show how a raw-chicken chopping board used for salad spreads Salmonella, and contrast this with Staphylococcal toxin that survives reheating.
- →Build a four-step ladder on the board (Company, National, Regional, International) and write FSSAI, BIS/Agmark, ISO and Codex at the correct rungs.
- →Run Activity 1 as a week-long class observation chart so that quality changes (bright to dull, firm to soggy, mould) are seen, not just read.
- →Demonstrate one safe adulteration test (iodine for starch in milk) and let groups predict the result before adding the reagent.
- →Let students map a local dhaba or canteen's process into HACCP steps and mark where a critical control point would sit.
- →Close with a career web from Fig. 6.6 and ask each student to pick one role and state which subject knowledge it needs.
📋 Assessment Questions
- Define and distinguish toxicity, hazard, contamination, adulteration and food quality with one example each.
- Explain the difference between food intoxication and food infection using Staphylococcus aureus and Salmonella.
- List the four levels of food standards and describe the main functions of FSSAI under FSSA 2006.
- Compare Codex and ISO, and explain why HACCP is preferred over end-product inspection.
- Describe the procedure, observation and interpretation of any two qualitative tests for food adulteration.
