Chapter 4: Food Processing and Technology
Introduction
Foods have been processed since ancient times. Grains were dried after harvest to increase their shelf life, and early processing aimed to improve digestibility and palatability and to ensure a continuous supply. Indian examples include pickles, murabbas and papads.
Today consumers want fresh, organic, safe and healthy foods that keep their nutrients and also have an adequate shelf life, are easy to package, and store and travel well. This demand pushes scientists to develop new processing methods. Everyone eats ready-made foods, from biscuits and bread to ready-to-eat curries.

Why Process and Preserve Food?
Foods suffer physical, chemical and biological deterioration: spoilage, off-flavours, loss of texture, discolouration and loss of nutrients.
Causes of deterioration include:
The oldest preservation methods are sun drying, controlled fermentation, salting or pickling, candying, roasting, smoking, baking and the use of spices.
Classes of foods by perishability:
Microbial growth depends on nutrients, moisture, pH, oxygen and inhibitors. Protein-rich foods are high-risk foods. Bacteria grow between 5 and 60 °C, the danger zone.
Basic concepts used to prevent spoilage:
Types of Processed Foods
Knowledge and Skills (the chapter's three stages)
Activities & Case Examples from the Text
- List the foods preserved at home in your region, with the method and preservative used.
- Identify local processed foods made with artificial sweeteners.
- Work in groups of 5–6 to make about 500 g of a preservable product (pickle, jam, squash, murabba, papad). Make it different from market products, for example by using watermelon rind, citrus peel, melon or pumpkin seeds, or dudhi peel, or by partly substituting an artificial sweetener.
- List ingredients and equipment, write the step-wise method, choose the packaging and prepare the product hygienically.
- Cost the materials, energy, labour and packing. Evaluate texture, taste, colour and quality.
- Design a label with:
- the product name
- the manufacturer's name and address
- ingredients in descending order of proportion
- net weight
- instructions for use and storage
- a "Use By" or "Best Before" date
Career Paths

Career avenues listed in the book:
Self-employment: Ventures can be low-investment (salted peanuts, drinking-water pouches, dehydrated products, pickles) or technology-intensive. The government offers finance, training, infrastructure and marketing support, and banks encourage women entrepreneurs.
The industry is worth US $61 billion and accounts for 13 per cent of exports and 6 per cent of industrial investment. It is estimated to grow at 20 per cent.
Board Exam Focus
The review questions cover:
Answer outline: Why process and preserve food? (3 marks). Foods deteriorate physically, chemically and biologically. List the causes (microbes, enzymes, pests, temperature, light, oxygen, moisture). Processing keeps food safe, extends shelf life and adds storability, portability, palatability and convenience.
Answer outline: Development of food preservation (5 marks). Start with the ancient methods (sun drying, salting, fermentation, smoking). Then cover Appert's canning in 1810, Pasteur's work in 1864 and pasteurisation, military needs and the world wars, space-age foods, ready-to-cook foods for working women, and today's health-oriented, fortified and low-calorie foods.

💡 Key Learning Points
- ✓Food processing transforms raw ingredients into finished or semi-finished products; food science studies food's nature, and food technology applies science and engineering to produce safe, convenient foods.
- ✓The field grew from Appert's canning (1810) and Pasteur's work (1864, pasteurisation) through wartime and space needs to today's health-oriented foods.
- ✓Foods deteriorate through microbes, enzymes, pests, temperature, light, oxygen and moisture; heat, moisture removal, low temperature, low pH and oxygen control prevent spoilage.
- ✓Processed foods are classified as minimally processed, preserved, manufactured, formulated, derivatives, functional and medical foods.
- ✓Careers range from production, QA, R&D and sensory evaluation to consultancy and entrepreneurship, with training at CFTRI Mysore and NIFTEM Sonepat.
👨🏫 Teaching Tips
- →Bring labels of packaged foods and have students classify each product into the seven processed-food categories.
- →Draw a timeline from sun drying to canning (1810), pasteurisation (1864), the world wars, space foods and fortified foods.
- →Show a thermometer graphic marking the 5–60 °C danger zone and discuss refrigeration and hot-holding.
- →Sort common foods into perishable, semi-perishable and non-perishable.
- →Relate each of the five spoilage-prevention concepts to a home example (boiling milk, sun drying papad, fridge, lemon in pickles, airtight jar).
- →Run Practical 1 as a mini start-up challenge with costing and label design.
- →Discuss the fortification examples (iodised salt, fortified oil and milk) and link them to Chapter 3.
📋 Assessment Questions
- Can the student define food science, food processing, food technology and food manufacturing?
- Can the student trace the history of food technology, including Appert and Pasteur?
- Can the student explain the causes of spoilage and the five basic preservation concepts?
- Can the student classify foods by perishability and processed foods into seven types, with examples?
- Can the student list the qualifications, institutes and career avenues in food processing and technology?
